When I’m stressed or anxious I have to EAT something. I literally turn into an empty pit that can eat mounds of food. My mom is the opposite. When she is stressed out she can’t even stand the sight of food. Over the years I’ve learned how to handle my moments of stress and anxiety. Like this week, my kids all started school. My little 4 year old sidekick, Gwen, started all-day Kindergarten and it was extremely emotional for me. Next week, the baby of the family, Chloe, starts preschool. So, I’m a little anxious about this new chapter we started this year. My little trick to handling stress without heading straight for chocolate are these crispy and salty baked kale chips. I’m telling you, they taste nothing like the bags you can get at health stores. These are so good and fresh! I eat piles of them without feeling one ounce of guilt. I was surprised to see that my kids love them too and sometimes they disappear with my plate of kale chips. You need to try them, they are fast, nutritious and easily to change up.

1. Turn your oven to 375 degress
2. Line a baking sheet with aluminum foil
3. In a big bowl wash and cut up ONE bunch of kale into 3-4 inch pieces. Discard the center stem. Dry the kale really well.
4. For every bunch of kale use 1 TB of olive oil and
