Hi friends! Hope everyone is doing really great. I’m reminded the last 10 days how thankful I am to be healthy. I’ve been stuck in bed since last Friday recovering from an unexpected surgery that came up. I had an abdominal hernia! I started having so much pain in my stomach and the pain got worse when I worked out. Anyways, I got it taken care of and I have to say it hasn’t been easy. Thanks friends for all the love, texts, calls. Big hugs. I literally keep thinking I just had a baby (I get c-sections and this felt like one) but I don’t have the reward of a baby after this surgery. I had to go to the city on Saturday for an event that I had already signed up to do. It was so fun to get out of my house but man am I paying for it. I’ve been in bed since Saturday night trying to get better. Good news– down time is 4 weeks and I’ll be half way there this Friday. Just know if you have a hernia (extremely common after pregnancy) it’s major surgery and you will need a solid month to recovery. I think I thought the surgery was going to be a walk in the park. oh well….I’ve been getting organized during my downtime and found these chore charts so my kids can help me around the house. They have been so good at helping me. I also love the independence it gives them. The cool thing about these charts is you can find your own clip art and design them on your mac with your own template. My kids love them!
One thing I make in the morning for my kids are these protein pancakes. They take 5 minutes to make and they are packed with fiber. They keep my kids and me full for hours. Really important during these long school days.
1 cup of quick oats, 2 eggs , 1 tsp vanilla , 1 tsp cinnamon – you can add 1 TB of sugar if you want ( I eliminated it over time )
Beat everything together. I double this recipe, cook them just like regular pancakes
Serve with maple syrup & fruit. These are thicker and heavier than regular pancakes so don’t be surprised.
I’m supposed to head to Puerto Rico next week. I’m getting nervous I won’t be able to because of my surgery but if I go I have all my clothes from PITUSA to wear! I love this line!!
