Hey guys! These mini muffins have been a hit in our family for over ten years. I love these mini muffin pans and use them for so many things. I use my kitchen aid mixer to mix everything up with my favorite mixing piece. I love the flex edge beater because it really scrapes the bowl as it mixes. If you have a kitchen aid you need this beater. It’s under $30. And if you don’t have a kitchen aid and really want one, I found a couple on sale.
Now that my kids are heading back to school these mini muffins are easy to add to their lunches. They can also eat them on the go after school on their way to lessons.
Cream butter, and sugar. Add eggs, mashed bananas, vanilla, and milk. Add dry ingredients. Add chocolate chips as an option too. Bake for 10-12 minutes, depending on how you like them. I like to under cook them. You can also make 2 small loaves out of this. Bake at 350 and for 45-50 minutes.

Oh my gosh these really are amazing!!!! And I love mini muffins. I’m pregnant so this is a yummy “pop in my mouth” snack to keep me going with the rest of my little crew. Thanks for sharing!!! Hopefully I don’t eat them all before my older kids get home from school.
