Have you ever had the chicken tomatillo soup from Nordstrom Cafe? It’s really good! I created my own version, and have to say..it’s really good! For real! A clean and healthy meal, everyone will love! The key is making your own tomatillo salsa. It adds that fresh tangy pop of flavor I love in a Mexican soup. I keep these ingredients on hand, always as seen here in this post.
INGREDIENTS:
Mirepoix Mix from TJ’s (it’s just carrot, celery and onion, chopped)
2 cartons of Organic Chicken Stock (I buy mine at Costco)
2 cups Shredded Chicken Breast
1.5 cups Fresh Tomatillo Salsa
1 large can of Hominy
Avocado and Limes for garnish
DIRECTIONS:
Sauté your mirepoix in your soup pan for 5 minutes. You can add a little olive oil if you want, but you don’t need to. Next add your broth and bring to a boil. After it begin to boil, turn the heat down to medium and let it cook until all veggies are soft (about 8-10 mins). Next add your chicken can of hominy (drained) and let everything simmer for an additional 20 mins. Right before you are ready to serve stir in your tomatillo salsa. Garnish will sliced avocado and a squeeze of fresh lime.
It’s seriously so so good! Makes great leftovers as well. This amount feeds my family of 5 with enough leftover for 1 or 2 more bowls.
