We’re less than a week away from Thanksgiving! My assignment this year at my moms are my honey mustard roasted carrots. Jeff loves when I make them! They are so easy and look pretty on any holiday table scape.
INGREDIENTS:
3 lbs of baby carrots, peeled
1/4 cup honey
3 tbsp olive oil
2 tbsp melted butter
1 tbsp balsamic vinegar
1 tsp garlic powder
2 tbsp dijon mustard
1/4 tsp dried thyme
1 tsp ground cumin
salt & pepper
DIRECTIONS:
preheat oven to 400 degrees. line baking sheet with foil. spray foil with non stick cooking spray. line your carrots across sheet, single layer.
mix all the ingredients above in a bowl and pour over the carrots. toss to coat. I then add another drizzle of honey and more salt and pepper. place in the over for 25-30 mins depending on size of carrots. you can test them with a fork to make sure they are tender. remove from oven and sprinkle with fresh parsley.
