lemon parmesan arugula salad

 There is a salad that I love at The Cheesecake Factory. I started to crave it all the time so decided to come up with my own version.  It is the easiest thing!  I make it at least 3 times a week.  You just dump the following ingredients and mix together…
~ Wild Arugula (I also like the bag of Organic Arugula)
~ Golden Raisins
~ Unsalted Dry Toasted Slivered Almonds
~ Shaved Parmesan Cheese
~ Brianna’s Lemon Tarragon Dressing
*all ingredients can be found at Trader Joes except for the dressing which is at most grocery store retailers and some Targets.
Not only do I love this salad because it tastes yummy and is super quick to make but I love the benefits I am getting from the Arugula!  Here are some of my favorites:

 1. Arugula has anti-viral and anti-bacterial properties!
2. Arugula contains about eight times the calcium, five times the vitamin A, vitamin C and vitamin K, and four times the iron as the same amount of iceberg lettuce.
3. Arugula contains beta carotene, lutein and zeaxanthin, all of which are being studied for their role as antioxidants or in the prevention of diseases like cancer and macular degeneration.
4. Arugula helps to reduce chronic inflammation
5. Arugula can protect the aging brain and cognitive decline with it’s high amounts of folate.

I promise you will love this salad.  My kids even eat it!
