PUMPKIN CHOCOALTE CHIP MINI MUFFINS
Hi guys! If you follow along you know I make these mini muffins once a week for my kids. I switch the recipe around during each season. I did a lot of BANANA MUFFINS during the summer. Now that it’s Fall, I love getting out my PUMPKIN RECIPE. These smell so good while baking.
You can use this recipe with or without the chocolate chips. I do mini chips sometimes but usually I add the big Ghiradelli Chips.
You need 2-3 MINI MUFFIN PANS to make these. I don’t like using muffin liners so I spray with olive oil spray.
ingredients
one 29oz. can of pumpkin (3 1/2cups)
1 cup vegetable oil
4 cups sugar
3 eggs
1 tsp. salt
5 cups flour
2 tsp cinnamon
2 tsp. ground cloves
4 tsp. baking soda
1 cup nuts or 1 bag chocolate chips (optional)
makes approximately 120 mini muffins
mix
mix together the pumpkin, oil, sugar, and eggs. Add flour, baking soda, cinnamon,cloves to the wet batter. Mix well for 1 minute. Add in chocolate chips or nuts. Pour into greased bread pans for loaves or use a scooper to scoop into mini muffin trays.
bake
bake at 325 degrees for 9-10 minutes for muffins ( I usually make one pan under baked for those in my family that like them that way)
bake at 325 degrees for 5o minutes for bread loaf pans
