salmon recipes

I’ve been making salmon a lot lately! It’s so easy to make, super healthy and can be prepared several ways. My favorite salmon to buy is from Costco. The fillet can be cut into portions and placed in ziploc’s for another day. 

Noodles with Salmon

Ingredients

  • 3/4 pound spaghetti
  • 1 pound skinless salmon fillet
  • kosher salt and black pepper
  • 4 tablespoons unsalted butter
  • 2 leeks washed and chopped
  • Chives, chopped
  • Cook spaghetti according to directions.
  • Meanwhile, season salmon with ¾ teaspoon kosher salt and ¼ teaspoon black pepper. 
  • Cook in 2 tablespoons of the butter in a large nonstick skillet over medium-high heat until opaque throughout, 4 to 6 minutes per side; remove and flake. 
  • Add the leeks to the skillet and cook until tender, 4 to 6 minutes.
  • Toss all together and enjoy. 
Citrus Salmon

  • 2 tablespoons orange marmalade
  • 1/2 teaspoon balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • Dash of ground red pepper
  • (6-ounce) salmon fillets
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Cooking spray
  • 1. Preheat broiler.
    2. Combine first 4 ingredients.
    3. Sprinkle salmon with salt and pepper. Place salmon on a broiler pan coated with cooking spray, and broil for 10 minutes or until almost done. Brush the marmalade mixture over salmon, and broil an additional 2 minutes or until fish flakes easily when tested with a fork.

  • Dill Sauce Salmon
  • (6-ounce) salmon fillets (about 1 inch thick)
  • Low-fat mayonnaise
  • Low-fat buttermilk
  • Fresh dill, minced
  • Fresh lime juice
  • Arugula, rinsed and drained
Fill a large skillet with 1 1/2 inches water; bring to a boil. 
Add salmon; reduce heat, and simmer 8 minutes, or until fish flakes easily when tested with a fork. 
Remove from skillet; discard cooking liquid. 
Combine 1/4 cup each mayonnaise and buttermilk, 2 tablespoons dill, 1 tablespoon lime juice, and a pinch each of sugar, salt, and pepper in a small bowl. 
Arrange 1 cup arugula and 1 salmon fillet on each of 2 plates, and drizzle the dill mixture over the fish.
