4th of July is a HUGE deal in our town. We have a local parade, pie contests, fireworks at the beach and of course lots of barbecuing. I always make my favorite strawberry pie to share. This year I planned it out and made a road trip to the farm with my girlfriends and our kids. I wanted fresh strawberries for my pies this year. They are so easy to freeze and use as needed. My girlfriends drove out from New York City to stay a couple days at my house. We stayed up way too late and made all sorts of amazingness with our strawberries. I can’t wait for the 4th this year with all my fresh strawberries to share.

You know when you go strawberry picking, everyone must coordinate outfits or at least have a cute summer dress on! I chose this pretty print maxi dress by ModCloth. It’s lightweight and perfect for summer outings. I love all the fun prints for summer that they offer. The dresses are easy to wear and completely effortless. You’ll feel like a million bucks the second you put it on.  I need summer dresses I can wake up and throw on. I don’t want to even think about putting an outfit together. The dress makes enough of a statement by itself. They are the perfect dresses for outdoor bbq’s and summer activities. I found this dress and fell in love within seconds. I mean, with a name like “Central Park Processional” it was meant to be. I’ll wear it during date night in the park next week. The dresses stand out and you won’t see other people walking around with the same print as you.

I have my eye on this dress for 4th of July. How cute are the pinstripes! You can even dress it up if you want with a white blazer. Or this patriotic top is beyond adorable with cut off jeans.  I love that they stand out and are completely unique. I definitely know I’ll be wearing red, white and blue. It’s one of my favorite holidays of the year. What are you up to for the 4th of July? I can’t believe it’s in a couple of weeks!

Ingredients
  1. 1 (14.1-ounce) package refrigerated pie crusts
  2. 2 cups lemon-lime soda (not diet)
  3. 1⁄2 cup sugar
  4. 6 tablespoons strawberry gelatin
  5. 2 tablespoons cornstarch
  6. 1 teaspoon vanilla extract
  7. 8 cups sliced fresh strawberries
  8. 3 cups halved fresh strawberries
  9. Garnish: whole fresh strawberries
Instructions
  1. Preheat oven to 450°.
  2. On a lightly floured surface, unroll pie crusts, and stack on top of each other; roll dough to a 14-inch circle, and fit into a 10-inch deep-dish pie plate. Fold edges under, and crimp as desired. Line dough with parchment paper, and fill with pie weights.
  3. Bake for 15 minutes or until golden brown. Remove pie weights, and let cool completely.
  4. In a large saucepan, bring soda and next 3 ingredients to a boil over medium heat, stirring until gelatin dissolves. Remove from heat, and stir in vanilla and sliced strawberries. Let cool for 10 minutes.
  5. Using a slotted spoon, spoon sliced strawberries into prepared crust, and top with halved berries. Gently pour strawberry liquid over berries. Refrigerate for at least 6 hours before serving.
